Simple pumpkin soup

Hijackqueen asked me to post on how Terese makes her pumpkin soup like for the longest time but I never had a chance to do it till now. Okay better pay attention hor, later I test you ah.

Pumpkin soup is traditionally made during the cooler months of the year as comfort food but Terese decided to make some the other day. There are different ways of making them but Terese likes to make it her own way so what you’re about to see is only the way that she likes to make it okay?

The most important thing is getting the right pumpkin for the soup you’re about to make. Terese prefers Japanese Pumpkins for their very sweet taste meaning the soup will also turn up sweet and delicious.

Cut the pumpkin into cubes, drizzle some oil over them before roasting them in the oven till they’re nice and soft. It’s not important on how long you need to roast it as long as you think they’re ready.

Then placed the roasted pumpkins in a pot and add in stock to cover them. She uses Campbell’s Real Consommé Chicken Stock but you can use any brand you like.

Let the whole pot simmer for a bit but don’t bring it to the boil. When the whole thing is nice and warm you can mash up the pumpkins. When its cool blend the mixture in a blender till its nice and smooth.

And that’s it, it’s that simple! You can keep the pumpkin mixture in the fridge until you want to eat them in which case you can then warm it up and add in a dollop of cream and stirred through.

In the mean time roast some panchetta strips in the oven till crunchy. You may use bacon strips if you like but Terese prefers panchetta because they are thin and roast quicker and they taste nicer than bacon.

Place a couple of the crunchy roasted panchetta strips in the soup and serve warm. Best have it on a cool night. It’s comfort food and your tummy will thank you for it!

  4. You won’t like my soup cos I am a health concious freek. I don’t use substitue flavouring leh. Anyway, thank you for the cooking lesson. I shall try them some day. This time using my way!

  5. I like to eat pumpkin. Full of vitamins. Normally I cook my rice with pumpkin together. Looks like vegetarin rice lol..

  13. wow, SO easy!!! i followed one recipe from the hare krishna recipe book we got for free czo we donated to this kid n it was so LONG to do la….so mahuan sum more!! now i know how to do it more easy….tq terese!!
